227g can pineapple pieces in juice, drained
100g sugar snap peas, roughly sliced
A handful of salted, roasted cashew nuts (optional)
Step 1:
1.In a large microwaveable dish, combine the following ingredients: 9 tbsp tomato ketchup, 3 tbsp malt vinegar, 4 tbsp dark muscovado sugar, and 2 crushed garlic cloves.
2.Add the 4 skinless and boneless chicken breasts, the roughly chopped small onion, and the red pepper chunks to the dish.
3.Mix the ingredients thoroughly in the dish until everything is well coated with the sauce.
4.Microwave the dish, uncovered, on high for 8-10 minutes until the chicken starts to cook and the sauce is sizzling.
Step 2: 
1.After microwaving, stir in the drained pineapple pieces and the roughly sliced sugar snap peas.
2.Return the dish to the microwave for another 3-5 minutes until the chicken is completely cooked.
3.Allow the dish to stand for a few minutes.
4.If you wish, you can stir in the optional salted, roasted cashew nuts.
5.Serve your sweet and sour chicken.

•Crispy Chicken
Ingredients:
4 large or 8 small chicken thighs, skin on
1 tbsp sunflower or olive oil
1 tbsp plain flour
Seasoning of choice (You can use salt and pepper or one of the following: ½-1 tsp of smoky BBQ, ras-el-hanout, garlic granules, celery salt, or garam masala)

Step 1:
1.To begin with, coat 1 tbsp of either olive or sunflower oil and toss the chicken thighs.
2.In another bowl, dissolve one tablespoon of all-purpose flour and your chosen seasonings. Select one or more of the indicated spices. The coating will, however, be thin but you may double the amount of flour and seasoning to get a thicker coating.
3.Mix the chicken thighs well in the seasoned flour.
Step 2:
4.1. Put coated chicken thighs on an air fryer tray (should be an air fryer that does not have a paddle) so as to arrange them in one layer.
5.2. Air fryer, cook – 35min.
6.3. You have to pull out the underside flesh of one thigh and check if the thigh has been properly done. It should come away easy without any pink left over.
7.4. Cook for an extra 5 – 10 minutes if necessary.
8.5. The underside of the air fryer should also have collected all the fat from the chicken as it cooks leaving the chicken skin bubbled and crispy. Get rid of this unwanted fat.
9.6. Do not leave the chicken in an open-air frying pan as steam may ruin the skin by softening it.
